Ingredients
1.5lbschicken thighs (bone-in or boneless)
2cupscarrots, peeled and sliced
2tbspolive oil
2clovesgarlic, minced
1tspfresh thyme
1tspfresh rosemary
1tbsplemon juice
salt and black pepper to taste
Instructions
In a bowl, mix olive oil, garlic, lemon juice, thyme, rosemary, salt, and pepper. Coat the chicken thighs evenly and marinate for 20 minutes.
Toss sliced carrots with a drizzle of olive oil, salt, and herbs.
Preheat air fryer to 380°F (193°C). Arrange chicken thighs skin-side down, adding carrots around the edges. Air fry for 18–20 minutes (boneless) or 22–25 minutes (bone-in), flipping halfway.
Once cooked, drizzle with extra lemon juice and sprinkle fresh herbs on top before serving.
Notes
For extra flavor, add smoked paprika to the marinade or drizzle garlic butter after cooking. Pair with mashed potatoes or orzo for a complete meal.
